Domaine William Fèvre Chablis Masterclasses at M&Z plc

M&Z plc had the pleasure of hosting two exclusive wine tasting masterclasses led by Xuan Nguyen Mazel, representative of Domaine William Fèvre, one of Chablis’ most prestigious estates.

The day began with a dedicated session for our HoReCa team, followed by an afternoon masterclass welcoming our valued HoReCa clients. Both sessions offered an in-depth exploration of Chablis, highlighting the elegance, precision, and terroir-driven character that define this iconic Burgundy appellation.

Guests were guided through an exceptional Chablis selection:

Domaine William Fèvre is the largest owner of Grand Cru vineyards in Chablis, cultivating approximately 70 hectares across 90 distinct plots at the heart of the appellation. Over the centuries, the estate has played a pivotal role in shaping Chablis’ reputation as one of Burgundy’s great terroirs, overcoming challenges such as the phylloxera crisis of the late 19th century to emerge stronger than ever.

The estate has also been a pioneer in environmentally responsible viticulture, adopting organic farming practices as early as 2000 on 50 hectares, and biodynamic methods since 2010 across all Premier Cru and Grand Cru vineyards. In 2014, Domaine William Fèvre became the first estate in Chablis to achieve High Environmental Value certification.

Chablis, located in northern Burgundy, is a cool-climate region producing exclusively Chardonnay. Its wines are renowned for their purity, high acidity, and pronounced minerality, often displaying notes of citrus and green apple. Quality classifications range from Petit Chablis to Grand Cru, offering increasing complexity, depth, and ageing potential.
